Lunch time in our house is usually a fend for yourself. The kids are happy fixing spaghetti Os's, sandwiches or something simple. Dinner is the big meal in our house and is when I do all the cooking.
I decided to switch it up a little bit today and actually cook something for lunch.
My husband wanted salmon with rice and some vegetables...so this is what he got!
His lunch consisted of Parmesan Encrusted Salmon, Rice and Broccoli, Carrots and Cauliflower in a cheese sauce....looks delicious right?
Just a few more things to make it complete for him...cocktail sauce and soy sauce added to his rice.
A nice healthy lunch for my husband that didn't take me too long in the kitchen to make.
He certainly enjoyed it!!!
What did you have for lunch today? Or what's for dinner tonight?
Dinner will consist of a Beef Pot Roast that I have slow cooking in the oven right now...I will be happy to share details and pictures :)
We had spam sandwiches... can you come over and cook my lunch? That looks delicious.
ReplyDeleteAnn, there is nothing wrong with Spam Sandwiches. We are from the South and Spam is one of the major food groups. Spam will actually save your life in a Zombie Apocalypse because it never goes bad!!! LOL But, just so you know, it was GREAT and I am having to get on this health kick to try and get into shape. Changing my diet was one of the many changes that are occurring. I am also drinking more water, which is what I had to drink with this delicious meal.

ReplyDeleteThat really does look good! Would you mind coming to Texas and teach me how to fix thst? Lol, seriously, i try to stay away from fish when cooking like that for fear of messing up a great piece of fish. It's always good to drink a glass of water before each meal and of course in between.
