Easy Green Velvet Cupcakes

A green twist on classic red velvet, these cupcakes take basic cake mix to delicious new heights with the addition of Pure Vanilla Extract, green food color, sour cream and cocoa powder.

Ingredients

Serves: Makes 24 servings.

1 package (2-layer size) German chocolate cake mix with pudding

1 cup sour cream

1/2 cup water

1/4 cup unsweetened cocoa powder

1/4 cup vegetable oil

1 bottle McCormick® Green Food Color

3 eggs

2 teaspoons McCormick® Pure Vanilla Extract

Vanilla Cream Cheese Frosting (see Tip)  Substitutions

Green sprinkles (optional)

Directions

Preheat oven to 350°F. Beat cake mix, sour cream, water, cocoa powder, oil, food color, eggs and vanilla in large bowl with electric mixer on low speed just until moistened, scraping sides of bowl frequently. Beat on medium speed 2 minutes.

Pour batter into 24 paper-lined muffin cups, filling each cup 2/3 full.

Bake 20 minutes or until toothpick inserted in center of cupcake comes out clean. Cool in pan 10 minutes. 

Remove from pans; cool completely on wire rack. Frost with cream cheese frosting. Decorate with sprinkles, if desired.

Emerald Mint Milkshake

This classic milkshake recipe is transformed into a flavorful, chilly concoction with a hint of green and touch of Pure Peppermint Extract.

Ingredients

Serves: 4

1 1/3 pint (2 2/3 cups) vanilla ice cream

1 1/3 cup milk

McCormick® Pure Peppermint Extract

1/3 teaspoon McCormick® Green Food Color

Directions

Place ice cream, milk, peppermint extract and green food color in blender container; cover. Blend on high speed until smooth.

Pour into glasses. Top with whipped cream and sprinkles, if desired. Serve immediately.

Cabbage Rolls

My husband loves Cabbage Rolls. He was first introduced to them by a friend when we were living in Michigan and I have been making them ever since for him. 

Cabbage Rolls are made with cabbage leaves filled with ground beef and rice, with tomato sauce.

Ingredients:

12 cabbage leaves

.Filling:

1 pound ground beef

3/4 cup cooked rice

1/2 cup finely chopped onion

1 egg

2 teaspoons salt

1 teaspoon pepper

1/2 cup milk

.

Sauce:

1 cans (8 ounces ) tomato sauce

1 can (14.5 ounces) diced tomatoes, undrained

3 tablespoons sugar

2 tablespoons vinegar

1/2 cup water

2 tablespoons cornstarch mixed with 1/4 cup cold water

Preparation: 

Drop cabbage leaves into boiling salted water; cover and cook for 3 minutes. Drain well. 

For filling, combine ground beef, rice, onion, egg, and salt, pepper, and milk. Mix well and divide into 12 portions. Place a portion into the center of each cabbage leaf. Roll leaf around filling; fasten with toothpick. Place in a baking dish. 

For sauce, combine tomato sauce, tomatoes, sugar, vinegar, and 1/2 cup of water and pour over cabbage rolls. Bake covered in a preheated 350° oven 40 to 45 minutes. 

Remove rolls and discard toothpicks. Place pan with juices over medium heat or transfer the juices to a saucepan and place over heat; stir cornstarch and water mixture into the sauce; bring to a boil and cook until thickened.

Corned Beef and Cabbage

We love Corned Beef and Cabbage in our household and have it every St. Patrick's Day and several other times during the year. I decided to search out different recipes because I love trying dishes that our family enjoys several different ways. This recipe stuck out to me the most because it seems so simple. I think I will definitely be trying this one for St. Patrick's Day this year. 

Ingredients

3 pounds corned beef brisket with spice packet

 10 small red potatoes

 5 carrots, peeled and cut into 3-inch pieces

 1 large head cabbage, cut into small wedges

Directions

Place corned beef in large pot or Dutch oven and cover with water. Add the spice packet that came with the corned beef. Cover pot and bring to a boil, then reduce to a simmer. Simmer approximately 50 minutes per pound or until tender.

Add whole potatoes and carrots, and cook until the vegetables are almost tender. Add cabbage and cook for 15 more minutes. Remove meat and let rest 15 minutes.

Place vegetables in a bowl and cover. Add as much broth (cooking liquid reserved in the Dutch oven or large pot) as you want. Slice meat across the grain.

Leprechaun Hat Cookies

These are so cute and perfect for St. Patrick's Day!

Ingredients

1 pouch Betty Crocker® sugar cookie mix (You can use chocolate chip cookie mix for the sugar cookie mix.)

½ cup butter or margarine, softened

1 egg

1 container (1 lb) Betty Crocker® Rich & Creamy vanilla frosting

¼ teaspoon Betty Crocker® green gel food color

24 large marshmallows

24 small (1-inch) chewy chocolate candies

12 small green gumdrops

Directions

1.       Heat oven to 375°F. In medium bowl, stir cookie mix, butter and egg until soft dough forms. Roll dough in 24 (1-inch) balls. On ungreased cookie sheets, place 2 inches apart.

2.       Bake 10 to 12 minutes or until edges are light golden brown. Immediately place marshmallow on each cookie. Remove from cookie sheets to cooling racks. Cool completely, about 15 minutes.

3.       In microwavable bowl, microwave frosting on High 30 seconds. Stir; frosting should be a thick spoonable glaze. Stir food color into frosting, adding more if needed to achieve desired color. Spoon warm frosting over each cookie, coating completely and allowing excess to drip off. Let stand 20 minutes to set.

4.       Roll chocolate candies into ropes. Flatten with rolling pin into 1/8-inch-thick ribbons. Cut into strips with scissors to resemble hat bands; arrange around base of marshmallow on each cookie. Cut gumdrops crosswise in half (reshaping as needed). Press cut side onto hat band. Lift cookies onto serving platter with pancake turner, leaving excess frosting behind. Store in airtight container.

How to Make Green Beer

Think (and drink) green on St. Patrick’s Day with our 1-2-3 guide to transforming your taps.

Use light-colored beer. The lighter the beer, the brighter the color. A dark beer will require more food coloring to get the same green hue. Too much food coloring and you’ll end up with green teeth. Ick!

Add beer to the coloring. To avoid flat beer, grab a large frosty beer mug, and squeeze in 3- 5 drops of green food coloring. Slowly pour beer from a 12-ounce can or a 16-ounce bottle into the glass. Watch the color mix as the beer goes in. Want more color? Add a drop or two more of food coloring. Put the beer in first? NO! You’ll have to stir the beer which will make it will go flat.

Only use green squeeze-bottle food coloring. Stick with the green food coloring that comes in the little squeeze bottles. Adding blue to yellow-hued beer seems like a clever alternative, but we don’t recommend. (You’ll end up with turquoise beer.) Also avoid coloring pastes.

Frosted Irish Cream Brownies

Ingredients

Brownies:

1 (1 lb. 3.8-oz.) pkg. fudge brownie mix

1/2 cup oil

1/4 cup Irish cream liqueur

2 eggs

Frosting:

1/2 cup butter or margarine, softened

2 cups powdered sugar

2 tablespoons Irish cream liqueur

1/2 teaspoon vanilla

2 to 3 teaspoons milk

Glaze:

1 oz. semisweet chocolate, chopped

1 teaspoon butter or margarine

Directions

1. Heat oven to 350°F. Grease bottom only of 13x9-inch pan. In large bowl, combine all brownie ingredients; beat 50 strokes with spoon. Spread in greased pan.

2. Bake at 350°F. for 25 to 30 minutes or until brownies are set and begin to pull away from sides of pan. DO NOT OVERBAKE. Cool 45 minutes or until completely cooled.

3. Beat 1/2 cup butter in small bowl until light and fluffy. Beat in all remaining frosting ingredients, adding enough milk for desired spreading consistency. Spread over cooled brownies.

4. Place glaze ingredients in small microwave-safe bowl. Microwave on HIGH for 30 seconds; stir until melted and smooth. Drizzle over frosted brownies. Refrigerate 30 minutes or until firm. Cut into bars.

Expert Tips

Irish cream liqueur contains Irish whiskey, sugar and cream. Depending on the brand, the liqueur may have spicy toffee or honey chocolate flavors. 

Brownies are done when edges look dry and start to pull away from the sides of the pan. Bake the brownies for the minimum time recommended, and then check their edges. Remove the brownies from the oven as soon as the edges are done; overbaked brownies are dry and hard.
